Steamed Something on a Bed of Greens

Good ol’ steamed greens become dinner with some flavorful additions—like an aromatic simmering liquid and a fast lemon-pepper-sesame butter—and something that cooks on top at the same time. I happened to have gorgeous local baby bok choy and Alaskan sockeye salmon. But here again the choice of components is yours. Serve with udon, soba, or rice noodles or plain rice.
