Stir-Fried Beef and Broccoli

  • 1 pound boneless beef sirloin, flank, or rib-eye steak
  • 4 tablespoons good-quality vegetable oil
  • Salt and pepper
  • 1 inch fresh ginger
  • 2 cloves garlic
  • 1 medium head broccoli (1 to 1 1 /2 pounds)
  • 4 scallions
  • 1 tablespoon sesame oil
  • 2 tablespoons hoisin sauce

Instructions

  1. Put a large skillet over high heat.
  2. Slice the beef against the grain as thinly as you can; better to have it shred a little than be too thick.
  3. Put 2 tablespoons vegetable oil into the skillet and immediately add the beef; sprinkle with salt and pepper. Cook undisturbed until it browns and releases from the pan, about 3 minutes. Then stir occasionally until it’s more browned but still a little rare in places, just another minute or two. Transfer the meat to a plate with a slotted spoon. Reduce the heat under the skillet to medium-high.
  4. Add 1/4 cup water to the skillet and scrape up any browned bits as it bubbles; pour the pan juices into a small bowl. Return the skillet to medium-high heat.
  5. Peel 1 inch ginger and 2 cloves garlic; mince them together.
    Trim the broccoli and break or chop it into small florets; cut the stems into thin coins or sticks.
  6. Add 2 tablespoons vegetable oil to the skillet. Add the broccoli and cook, stirring occasionally, until it browns slightly, 3 to 5 minutes. Add the ginger and garlic. Cook, stirring, until fragrant, about a minute. Add 1/4 cup water and the reserved beef juices, cover the skillet, and cook until the broccoli is as tender as you like it, another 3 to 5 minutes.
  7. Trim and chop the scallions.
  8. Return the beef to the skillet along with the scallions, 1 tablespoon sesame oil, and 2 tablespoons hoisin sauce.
  9. Toss to coat everything with the sauce and heat the beef through. Taste and adjust the seasoning, and serve.
