The simplest of Mark’s stir-fry recipes uses sliced steak to teach the basic technique. From there you can take it into a less-meat-more-vegetable direction (see the variation) or serve the beef with a bowl of steamed winter greens or broccoli.

You can also use sliced boneless chicken thighs or pork sirloin instead of the beef. And to make the stir-fry completely plant-based, substitute sliced portabella mushroom caps for the steak, and skip the freezing step.
