Stir-Fried Pork with Edamame and Scallions

  • 3 tablespoons good-quality vegetable oil
  • 1 pound boneless pork loin or sirloin chops
  • Salt and pepper
  • 1 inch fresh ginger
  • 2 cloves garlic
  • 4 scallions
  • 2 cups frozen shelled edamame
  • 1 lemon
  • 1 tablespoon soy sauce, or more to taste

Instructions

  1. Put 2 tablespoons vegetable oil in a large skillet over medium-high heat.
  2. Slice the pork against the grain as thinly as you can; better to have it shred a little than be too thick.
  3. Add the pork to the skillet, sprinkle with salt and pepper, and cook undisturbed until it browns and releases easily, about 3 minutes. Then cook, stirring occasionally, until it’s only a little pink in places, another couple minutes.
  4. Peel 1 inch ginger and 2 cloves garlic; chop them together.
    Trim and chop the scallions, keeping the white and light green bottoms separate from the dark green tops.
  5. Add the ginger, garlic, and scallion bottoms to the pork. Cook, stirring, until fragrant, about a minute. Transfer the pork mixture to a plate with a slotted spoon.
  6. Add 1 tablespoon vegetable oil to the skillet along with 2 cups edamame, 1/4 cup water, and a sprinkle of salt and pepper. Increase the heat to high and cook, stirring occasionally, until the beans are tender and heated through, about 3 minutes.
  7. Halve the lemon.
  8. Squeeze in the juice from the lemon through a strainer or your fingers to catch the seeds and add 1 tablespoon soy sauce; toss to coat. Return the pork to the skillet along with any juices and stir in the scallion tops. Taste and adjust the seasoning, and serve.
