Stir-Fried Un-Sprouted Lentils with Broccoli and Chicken
Instead of several days this only takes an extra 20 minutes. Skip the first 4 steps in the recipe above. Use 3/4 cup Bob’s Red Mill dried brown lentils. Rinse and pick over the lentils in a strainer under running water, then, put them in a medium saucepan with 3 cups water and a generous pinch of salt. Bring to a boil, then reduce the heat so the liquid bubbles steadily. Cover and cook, stirring once or twice, for 15 minutes before checking for doneness–you want them tender without getting mushy and breaking apart. Keep checking every couple minutes until they’re ready. When they are done, drain the lentils, then proceed with steps 5 through 9 in the recipe above, adding the lentils when the recipe says to add the sprouted lentils.
