Heat the oven to 450°F. Grease a 9-inch square baking dish or medium skillet with the oil.
Beat the egg in a large bowl. Add the olives, cheese, garlic, and beef and season with salt and pepper. Gently fold the ingredients together with your hands until they just come together and no more. Transfer the mixture to the prepared pan and pat it into a wide shallow loaf in the center no more than 2 inches thick (it won’t go to the edges).
Whisk together the vinegar and honey in a small bowl and season with a little salt and lots of pepper. Brush the top of the loaf with the glaze. Bake, bast- ing 2 times, until the top is caramelized and the loaf is 160°F at the center, 25 to 30 minutes. Let cool for a few minutes before slicing. Serve hot, warm, or at room temperature with the lemon wedges.
