Toast with Toasted Almond Butter and Strawberries

  • 2 cups raw almonds
  • 2 cups strawberries
  • 4 thick slices whole grain bread
  • Salt
  • Honey for drizzling

Instructions

  1. If you don’t have a toaster, heat the oven to 400°F.
  2. Put 2 cups almonds in a large dry skillet over medium heat. Cook, shaking the skillet frequently, until lightly browned and fragrant, 3 to 5 minutes.
  3. Hull and slice 2 cups strawberries.
  4. Toast 4 slices bread in a toaster or on a rimmed baking sheet in the oven, turning once, until it’s as dark as you like.
  5. Transfer the toasted almonds to a food processor; add a sprinkle of salt. Grind to the consistency of coarse meal.
  6. Add 1/2 cup water. Process until creamy, 1 to 2 minutes. Add more water, 1 tablespoon at a time, and process until spreadable. Taste and add salt if you like.
  7. Spread the toast generously with almond butter. Top with sliced strawberries, drizzle with honey, and serve. (Refrigerate leftover almond butter in a sealed container for up to a month.)
