Watermelon-Mint Agua Fresca

Ingredients

  • 4 cups chopped peeled and seeded watermelon
  • 1/4 cup lightly packed fresh mint leaves
  • Pinch salt
  • 1 tablespoon Simple Syrup, honey, or turbinado sugar, or to taste (optional)

Instructions

  1. Put the watermelon, 2 cups cold water, the mint, and salt in a blender and process on high speed until smooth. Sweeten if you like. Enjoy as is or pour through a fine-meshed strainer to remove any fibers.

Recipe variations

Peach-Basil Agua Fresca
Replace the watermelon with 3 cups chopped pitted peaches (peeled if you like) and use basil instead of mint. Increase the water to 3 cups.

Strawberry-Raspberry Agua Fresca
Replace the watermelon with 2 cups raspberries and 2 cups halved hulled strawberries. The mint is optional.

Mango-Lime Agua Fresca
Replace the watermelon with 3 cups chopped peeled mango. Increase the water to 3 cups and add 2 tablespoons fresh lime juice (or to taste).

Single-Serve Chia Fresca
A unique texture and delicious way to get a boost of protein. No need for a blender: For a traditional chia fresca, in a large glass combine 1 1/2 cups cold water, 2 tablespoons fresh lemon or lime juice, and 1 teaspoon sugar or 1 tablespoon liquid sweetener like honey or any syrup. Stir in 2 teaspoons chia seeds. Give the seeds about 10 minutes to absorb liquid, stirring to keep the seeds in suspension if any of them fall to the bottom. Taste and add more citrus juice or sweetener if you’d like.

Single-Serve Fruity Chia Fresca
This drink will be a little thicker than the previous variation. Start with 1 1/2 cups agua fresca from the main recipe or a variation. Stir in 2 teaspoons chia seeds and wait and stir as directed for Chia Fresca.
