Time 25 to 30 minutes
1. Start the coals or heat a gas grill for medium direct cooking. Make sure the grates are clean.
2. Cut the watermelon into 2-inch-thick slices, with the rind intact, and then into halves or quarters, if you like. If there are seeds, use a fork to remove as many as you can without tearing up the flesh too much.
3. Put the oil and rosemary in a small bowl, sprinkle with salt and pepper, and stir. Brush or rub the mixture all over the watermelon slices. (You can prepare the watermelon for the grill up to 2 hours ahead; wrap tightly in plastic wrap to keep it from drying out and refrigerate.)
4. Put the watermelon on the grill directly over the fire. Close the lid and cook, turning once, until the flesh develops grill marks and has dried out a bit,4 to 5 minutes per side. Transfer to a platter and serve with lemon wedges.
