Time 40 minutes
Set a pot of water to boil and salt it.
Put the onions, dry, in a small saucepan, turn the heat to medium-low, and cover it; let that sit until the onions are dry and almost sticking to the pan, about 10 minutes.
Add half the oil and the spinach and continue to cook, stirring frequently and adding a pinch of salt, until the onions are soft and lightly browned and the spinach wilted, another 10 minutes or so. When they’re almost done, start the pasta.
Put that mixture in a bowl and add the remaining oil and bread crumbs. Stir until they’re lightly browned. By then the pasta should be done: Drain it (reserving a little of the cooking liquid), add it to the spinach-onion mixture, toss with the breadcrumbs, add more oil and a bit of the cooking water if needed to moisten, sprinkle with a bit of pepper, and serve.
