The real Bethlehem, and its food

For today’s episode, Mark and I talked to Fadi Kattan, chef and author of the brand new cookbook, Bethlehem: A Celebration of Palestinian Food. A Franco-Palestinian chef who lives in Bethlehem, Fadi hails from that city and owns two restaurants: Fawda, in Bethlehem, and Akub, in London, both of which celebrate Palestine’s rich diversity of ingredients and culinary traditions and feature Fadi’s twist on the cherished food of his homeland.
I was immediately drawn to Fadi’s book, which features at home renditions (read: great for the home cook) of Fadi’s culinary delights — it’s hard to find a recipe in there that you won’t want to make. We talked, of course, about how “timely” this book is — a topic that can’t be ignored — but, timeliness aside, we were grateful to have the opportunity to talk to such a talented chef and to use the podcast as a space to continue the conversation about how food really can bring us closer together, if it’s done the right way.
