
A few months back, Kate did a Q&A with entrepreneur Pooja Bavishi. Pooja is the founder of Malai, ice cream that you can get in select stores or order online, but that also has three brick and mortar shops—in Brooklyn, Philly, and DC.
Malai was in large part inspired by Pooja’s childhood—she’s a first generation Indian American and employs flavors highlighting the culture and traditions that she grew up with, and, as she puts it, the magic that she felt in the kitchen at a young age. So: Cardamom Pistachio Crumble, Sweet Corn Saffron, and Rose with Cinnamon Roasted Almonds—which I love. And she created her own ice cream base, which is rooted in cream cheese and gives her products a beautiful tang.
When Kate chatted with Pooja, Pooja was celebrating the release of her cookbook, also called Malai, and she enjoyed their chat—and the ice cream that she tried—so much that she suggested we invite Pooja onto the podcast. I’m so glad she did.
