In this take on the Szechuan classic, Ma Po Tofu, fresh chiles and fermented black beans deliver tons of flavor. If you’re leery of tofu, the freezing method here eliminates all the common textural complaints and turns it into an entirely different food. However, if you don’t have time — or you forget — to freeze the tofu, it’s better to use 1 pound firm silken tofu (usually 1 1/2 packages) instead of unfrozen firm blocks. Break it into small pieces in Step 5.

A note on buying jackfruit: You want “young” or “green” canned jackfruit, not the fully ripe, stinky fruit. Stay away from the kind packed in syrup; choose a brand canned in water or brine and rinse it thoroughly to remove as much of the vinegary taste as possible. If you see frozen plain jackfruit, grab some. To use, thaw under cold running water (or in the fridge), squeeze it dry, and proceed. The sauced jackfruit will be even better reheated the next day.

You can buy a tofu kit but the old way is simple enough. All you need are an instant-read thermometer, some cheesecloth (though you can make do with a clean kitchen towel), and a tofu mold, which you can create out of any kind of container you’re able to punch a few holes into: a plastic storage container, the plastic tub from store-bought tofu, a loaf pan, or even a strainer. There are a number of potential tofu coagulants named in the ingredient list, but don’t worry too much if you don’t want to track down any of the weird ones; vinegar and lemon juice work fine.

Cheese Fondue

You can make fondue even if you don’t own a multi-piece set. Any enamel or ceramic-lined pot will do. Instead of the classic Swiss cheeses like Gruyère or Emmental (or Appenzeller, Fribourg, or Vacherin), any good melting cheese—like cheddar, Jack, Comté, or fontina—will work fine. Even the alcohol is flexible: Dry and acidic white wines are good for balancing the heaviness of the cheese, but beer, dry cider, and red wine are also nice.
