“Let’s be a part of something different”

We are happy to have René Redzepi and Matt Goulding on Food with Mark Bittman this week. René is, of course, the brilliant chef of the world famous Noma, one of the most innovative, pacesetting, attention-grabbing restaurants of our time. I’m lucky enough to have known him and done stories with him for the last 15 years.
Joining us also is Matt Goulding – Matt I’ve known even longer than René. I think we met in 2003 — he showed up at a photo shoot I was at and said he wanted me to write for Men’s Health, where he was an editor at the time (and where I did end up doing a column for a year or two). Matt went on to create the Eat This, Not That franchise, which became enormously successful, and then co-founded Roads and Kingdoms, a wonderful publication that was elevated and supported by Anthony Bourdain (Matt was also a producer on Bourdain’s show, Explore Parts Unknown). Plus, he’s authored 21 books.
René and Matt have now joined forces to create the new Apple TV+ show Omnivore, which comes out this Friday (July 19), an eight-part documentary series narrated by René. Each episode celebrates the cultivation, transformation, and consumption of eight of the world’s most essential ingredients – those are bananas, chiles, coffee, corn, pork, rice, salt, and tuna – and reveals how these ingredients serve as cornerstones of global cultural heritage. Omnivore is the story of every day items that have changed the world in ways most of us have never considered – and talking to René and Matt about it (and other things, of course) was rejuvenating and uplifting, even.
