Is Cabbage Really the Best of All Vegetables?

With a personal style that could be generously described as ‘basement chic’ and a penchant to keep my life simple and thrifty, trendy is one thing I am not. This vibe applies to what I typically have in my crisper drawer, too. While I can certainly appreciate a flashy head of radicchio Treviso, a slinky endive, or a cheerful candy stripe beet, and have even been known to canoodle with the occasional kohlrabi, perhaps my truest vegetable love is the humble green cabbage. As vegetables go, plain green cabbage skews decidedly stalwart, trusty, and low-key. Like me, cabbage ain’t trendy.

Imagine my thundering shock then, when I recently saw a New York Times article — on the lead page of the website, no less — about cabbage’s recent ascendancy to culinary glamour. Whuuuuuuuuuut?
