Q: We’ve followed your career and loved your columns in the New York Times. We’ve cooked many of your recipes and have enjoyed your books. And we share your goals through the Bittman Project for addressing the serious issues affecting our food supply in addition to the enjoyment of food.

We were thrilled when you wrote Kids Cook Everything. Our granddaughter [pictured above] was thrilled when we gifted her a copy for her seventh birthday this past weekend. The book is great and has so much information and recipes that may appeal to a picky eater like her. Unfortunately, her 8-1/2 year-old brother is seriously allergic to eggs and so many of the recipes call for them. I wonder what egg substitutes you recommend. We would appreciate hearing back from you with any suggestions. — Paula
