Red Lentils with Apples

Ingredients

  • 1 cup red lentils
  • 1 small onion
  • 6 cups vegetable stock or water
  • 2 large apples
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • Salt and pepper
  • 3 tablespoons butter

Rinse and toss the lentils in a strainer under cold water, discarding any that look discolored.

Trim, peel, and chop the onion.

1. Put the lentils and onion in a large pot with 6 cups stock or water. Bring to a boil.

Peel, quarter, and core the apples; chop them into bite-sized pieces and add them to the pot.

2. When the soup comes to a boil, adjust the heat so it bubbles steadily but gently. Add 1 teaspoon ground allspice, 1/2 teaspoon ground ginger, and a sprinkle of salt and pepper. Cover and cook, stirring once in a while, until the lentils and apples are quite soft, 15 to 20 minutes. Stir in the butter, taste, and adjust the seasoning, taste, and serve.
