Steamed Artichokes

The simplest and best way to cook artichokes is to steam them, since they don’t become soggy. You can add some gentle seasonings to the pot if you like; tarragon or thyme, onion or garlic, lemon juice or vinegar are all good. Serve artichokes hot, at room temperature, or cold, with something for dipping.

Ingredients

  • 4 large or 12 small artichokes
  • Melted butter, Vinaigrette, mayonnaise, or lemon wedges, olive oil, and salt for serving

Instructions

  1. Follow the illustrations below for preparing whole artichokes.
  2. Rig a steamer and add the artichokes bottom up. Cover and cook until an outer leaf pulls away easily and its meat is tender, 20 to 40 minutes.
  3. Drain them upside down for a minute or 2 longer before serving hot; store upside down if you plan to serve them later. Melted butter is best with hot artichokes; or serve at any temperature with vinaigrette, mayonnaise, or lemon juice and olive oil, and of course, salt.
