Ropa Vieja

December 16, 2025 by Mark Bittman Leave a Comment

“Old clothes” may not sound that appetizing, but it’s one of those overcooked, funky, juicy, tender dishes you can’t stop eating (at least I can’t). And the only thing even remotely difficult about it is shredding the steaks into the ropy strands that give Ropa Vieja its fanciful name. Still, it’s not you-can-do-it-wrong difficult; it’s just a bit of an upper body workout.

Seared, marinated steak with salsa verde makes a heck of a taco.

Macaroon Magic (Including a Vegan Variation!)

December 15, 2025 by Mark Bittman, Kerri Conan Leave a Comment

The easiest cookies ever get a Holiday glow-up. As with Mark’s Classic Macaroons and Sparkly Coconut Snowballs, only unsweetened shredded coconut works here. Fortunately, it’s commonly available; if all you can find are the ribbons, pulse them a few times in the food processor to get the right texture. Since the ratio is one egg white to one cup coconut and 1/3 cup sugar, the math for making big batches of dough is easy to calculate. Be sure to check out all the variations before deciding what to make first.

As sweet, crunchy, and addictive as caramel corn. Adding marshmallows to the caramel holds it together, making it even easier to eat.

Beans and Greens Soup with Fried Egg

December 8, 2025 by Mark Bittman Leave a Comment

For soup that eats like hearty stew, the greens-and-beans combination always delivers, especially when topped with a fried egg. This is what I call a “universal” recipe—one that works for virtually any bean or green. If you make the beans from scratch, terrific; but with the aromatic vegetables here, canned can be just as flavorful.

Spiced Wintertime Tomato Soup with Hard Boiled Eggs

December 8, 2025 by Mark Bittman Leave a Comment

Here’s the easiest, creamiest homemade tomato soup ever. Each bite brightens the chilliest days—or nights—with a touch of warm spice. And it’s super adaptable: Whole tomatoes you puree yourself deliver rich body and flavor, but crushed or diced are fine in a pinch, and you can skip that step if you want a chunkier soup. You pick the spice, too—curry or chili powder both do the trick. To make this a meal in a bowl, nestle in a hard-boiled egg, done to your liking. And for an even heartier version, add a cup or so of cooked rice just before serving and stir until piping hot.
