Spaghetti and Drop Meatballs with Tomato Sauce (Holden’s Meatballs)

The most time-consuming part of making meatballs is rolling them. The solution? Don’t. Just use two spoons to drop little mounds of the mixture into the hot skillet. Skipping the rolling also prevents you from overworking the meatballs until they get tough. Leave them alone to brown beautifully on the bottom while you start building the tomato sauce around them.

Combing through my mostly old Pinterest page I stumbled upon this Colu Henry chicken. I almost didn’t make it because of the raisins (I do not like hot raisins) but felt like the green olives (Castelvetrano forever) might make up for them. Spoiler alert — the raisins and olives really do make the dish spectacular. I’ll definitely make this one again.

I’ve been wanting to try grilled cheese with kimchi for a long time, and this didn’t disappoint. I used Ali Slagle’s recipe from the Times, but it’s grilled cheese, so you can really do it however you normally make it; just add the chopped kimchi and you’re good. I used excellent bread from She Wolf Bakery, because I was too lazy to make my own this time.
